Make ahead and storage

The sauce keeps 2 days, covered, in the fridge. Cooked salmon is best eaten the day it is cooked. Guidance pending food-safety review.

Plating

Sauce first, then fennel, then the fish skin side up so the skin stays crisp.

How nutrition is calculated

In production, each ingredient maps to a food-composition record (for example USDA FoodData Central), with source, version, edible portion and preparation state stored. Carbohydrate follows one stated convention across the site. Missing data is shown as unknown, never zero. Pan oil not eaten is excluded.
